Our first feature recipe is a staple in our exhibits and trade fairs: the Veggie Salad with Honey Vinegar Vinaigrette using the Lola Conching Coco Nectar Vinegar with Honey. This salad is easy and simple to make, but it packs a lot of refreshing and interesting flavors. For those of you who have been accustomed to salads with store-bought mayonnaise dressings, this is an excellent and healthy alternative as this has none of the creamy taste and texture of most salads. A rustic and colorful dish such as this one is a perfect companion to every meal, or could be a hearty meal on its own. Ingredients For the salad:
- lettuce (cut into bite-sized pieces)
- carrots (cut into strips using a vegetable peeler)
- turnip (cut into thick strips)
- cucumber (cored and deseeded, and sliced into thin half-moons)
- mangoes (diced)
- seedless grapes (halved)
Combine everything in a nice serving bowl. Keep the ingredients chilled before mixing them together to preserve their crisp texture and freshness, and to prevent them from becoming soggy. For the vinaigrette:
- Lola Conching Coco Nectar Vinegar with Honey
- olive oil
- salt and pepper
In a small bowl, whisk in equal parts Lola Conching Coco Nectar Vinegar with Honey and olive oil, and salt and cracked black pepper to taste. As the vinegar is sweetened with raw wild honey, it possesses a surprising balance of sweetness and tartness, so you may actually opt to use less olive oil. Drizzle the dressing over the salad and combine well. You can add more vegetables and fruits in the salad, like bell peppers, spinach, tomatoes, and or apple slices. To make it into a full meal, top it with grilled chicken, sauteed shrimps, or a poached or fried egg. You can also add herbs and spices into the vinaigrette to make it more savory or spicy as you like. This salad is easy to prepare and a great addition to your diet. Serve it for lunch or dinner to make your meals healthier and more delicious and flavorful!
